- Two scallions, thinly sliced
In a bowl, whisk together the lime juice, olive oil, honey, ginger, and lime zest. Add the cucumbers and toss to coat. Let the mixture marinate. Before serving, stir in the basil, mint, and scallions.
Avocado Mango Salsa with Grilled Fish
Salsa Ingredients:
- One mango, diced
- One avocado, diced
- One-fourth cup red onion, diced
- One-fourth cup fresh cilantro, chopped
- One Lime, juiced
- Pinch of salt
Fish Ingredients:
- Four white fish fillets
- One teaspoon paprika
- One teaspoon salt
- One-half teaspoon garlic powder
- One-half teaspoon ground cumin
- One to two tablespoons olive oil
For the salsa, mix all ingredients in a bowl and set aside.
For the fish, pat fillets dry with paper towels. Rub with olive oil and coat with spices. Heat olive oil in a pan over medium heat. Cook the fish until it is opaque and flakes easily with a fork. Serve the fish topped with the salsa.
Spicy Shrimp Taco Entree
Garlic Cilantro Lime Sauce:
- One-fourth cup oil
- One-half cup fresh cilantro
- One-half cup chopped green onions
- Two cloves garlic
- One-half teaspoon salt
- Two limes, juiced
- One-half cup sour cream
- One-fourth cup water
Shrimp Spice Mix:
- Two teaspoons chili powder
- Two teaspoons cumin
- One-half teaspoon onion powder
- One-half teaspoon garlic powder
- One-fourth teaspoon cayenne pepper
- One teaspoon sea salt
Shrimp and Toppings:
- One pound large shrimp
- Two cups green cabbage
- Eight tortillas
- Two avocados, sliced
- One-fourth cup Cotija cheese
For the sauce, blend all sauce ingredients until smooth. Toss the cabbage with a small amount of the sauce. In a bowl, toss the shrimp with the spice mix. Heat oil in a pan and cook the shrimp until pink and opaque.
To assemble, place shrimp on a tortilla, top with avocado, cabbage, cheese, and a drizzle of the sauce.
